👨🍳 Instructions
Step 1: Prep the Potatoes and Pork
Boil the potatoes in their skins until tender. Once cooled, peel them and slice into rounds. Slice the pork loin into chops and tenderize them with a meat mallet. Season both sides of the pork chops with salt and black pepper.
Step 2: Sear the Meat and Sauté
Heat a little oil or lard in a pan and sear the pork chops on both sides until golden brown. Remove the meat and set aside. In the same pan with the remaining fat, sauté the sliced onions and fry 3/4 of the bacon until lightly crisped.
Step 3: Layer the Base
Grease a medium baking dish (ideally 31x25 cm) with lard or oil. Arrange the sliced potatoes in an even layer at the bottom of the dish. Season the potatoes with salt, black pepper, and a generous sprinkle of sweet Hungarian paprika.
Step 4: Assemble the Layers
Scatter the sautéed onion and bacon mixture evenly over the potatoes. Spoon the smooth-stirred sour cream over the onions. Arrange the seared pork chops on top of the sour cream layer. Brush each chop thinly with mustard, then sprinkle the grated cheese evenly over the top. Finally, lay the remaining 1/4 of the bacon slices on top of the cheese.
Step 5: Bake to Perfection
Bake in a preheated oven at 180°C (350°F) for approximately 45 minutes, or until the cheese is melted, golden brown, and bubbling, and the bacon on top is crispy.
